Squash Blossom Frittata

I never really thought of fritatta’s as anything special until I had to make one for a dinner. Now I love Fritatta’s and wish I could make them more! This is a recipe that is good for brunch parties or as a light snack throughout your day.

Ingredients

  • 10 Eggs
  • 4 Squash Blossoms - no stems
  • ½ cup Spinach - chop
  • 8 Grape Tomatoes - halves
  • Ricotta
  • ½ cup Almond Milk 
  • TT Salt

InStructions

  1. Preheat oven to 380 degrees F 
  2. Whisk eggs and Milk together in a large mixing bowl
  3. In an 8 in round frittata pan scatter vegetables and ricotta. Then pour egg mixture over vegetables. Make sure to leave a ¼ in of space at the top
  4. Bake in oven for 20 minutes or until toothpick inserted in the center comes out clean
  5. Let cool then enjoy!
