I never really thought of fritatta’s as anything special until I had to make one for a dinner. Now I love Fritatta’s and wish I could make them more! This is a recipe that is good for brunch parties or as a light snack throughout your day.
Ingredients
10 Eggs
4 Squash Blossoms - no stems
½ cup Spinach - chop
8 Grape Tomatoes - halves
Ricotta
½ cup Almond Milk
TT Salt
InStructions
Preheat oven to 380 degrees F
Whisk eggs and Milk together in a large mixing bowl
In an 8 in round frittata pan scatter vegetables and ricotta. Then pour egg mixture over vegetables. Make sure to leave a ¼ in of space at the top
Bake in oven for 20 minutes or until toothpick inserted in the center comes out clean
